Whenever I am too busy or tired but I still have to make food, my go-to are crockpot dishes and recipes because they are often so effortless and convenient to make. What I also love about them is that they are always very delicious and guaranteed to impress the whole family.

One of my favorite recipes is this one by Kelsey Smith on YouTube and I have made this a couple of times already, so trust me when I tell you that this dish is a winner! It can feed a crowd and you might still even have leftovers that you can enjoy the next day.
Ingredients for Hamburger Potato Casserole:
- 2 pounds of ground beef
- 1 medium yellow onion, diced
- 4 medium russet potatoes, peeled and sliced thinly
- 2 (10.5 oz) cans of cream of mushroom soup
- 1 cup of milk
- ½ tsp of garlic powder
- ½ tsp of kosher salt
- ½ tsp of ground black pepper
- ½ cup of sharp cheddar cheese, shredded
- ½ cup of Monterey Jack cheese, shredded
How to Make Hamburger Potato Casserole:
Step 1
Place a large skillet on a stove over medium-high heat, then add the ground beef, and break it apart. Cook it until nice and brown, then add the diced onion, and keep cooking until translucent.
Step 2
Drain off any excess grease, then turn off the heat, and remove the pan from the stove. Now, add in the cream of mushroom soup, milk, garlic powder, salt, and pepper, then stir everything until well combined, and set the mixture aside.
Step 3
Assemble half of the sliced potatoes to the bottom of a greased or lined crockpot in a flat year, then pour half of the ground beef mixture over the potatoes, and sprinkle half of the shredded cheese on top.
Step 4
Repeat the layers with the remaining potatoes, ground beef mixture, and shredded cheese. Cover the crockpot with the lid, then let it cook on a low setting for about 6 to 8 hours or a high setting for about 3 to 4 hours until the potatoes are fork-tender. Serve and enjoy!
