Chicken Seasoning
Step 1
In your slow cooker, pour the rice, then add the frozen veggies, chicken broth, soy sauce, and salt to taste, and then give them a good mix to combine. Make sure to taste and adjust the flavor as needed, then set the slow cooker aside for later. In a large mixing bowl or plate, add the garlic powder, onion powder, paprika, dried oregano, dried parsley, dried thyme, and salt and pepper to taste, then mix them all together until uniform and well combined. Place the chicken thighs, then season both sides of each piece nicely until well coated, and place a skillet pan on a stove over medium-high heat.

Step 2
Add the oil, then let it heat up, and place the seasoned chicken searing them for about 2 to 3 minutes on each side until browned. Once done searing, add them to the slow cooker, then in the same pan, add the minced onions, and saute them until translucent and caramelized. Now, add the minced garlic, then stir, and saute for about 30 seconds or until fragrant. Add the sauteed onions and garlic to the slow cooker, then cover with the lid, and cook them over a high setting for about 4 hours. After about 3 hours, toss and fluff the rice around to even out the cooking, then cover it back with the lid, and let the cooking time finish. Serve and enjoy!
