Ingredients:

  • 1.5 lb chicken breasts (boneless, skinless)
  • 1 can (28 oz) red enchilada sauce
  • 10 corn tortillas
  • 3 cups grated cheddar cheese (divided)
  • 1 can (3.8 oz) of black olives (divided)

Directions:

Step 1

Place the chicken breasts in the slow cooker. Next, pour down 1 can of red enchilada sauce. Cover the slow cooker with its lid, turn it on, and set it to four hours.

Step 2

After four hours, take off the lid of the slow cooker and shred the chicken breasts using two forks. After this, add the 10 corn tortillas, 1 & 1/2 cups grated cheddar cheese, and 1/2 of black olives. Mix well to combine. After mixing, add the rest of the grated cheddar cheese and black olives. Cover with a lid and cook it for forty more minutes. After forty minutes, transfer to a plate and serve while it’s hot.
