Dipping Sauce
Step 1
Wash the potatoes well and peel off the skin, then cut them into small bite-sized pieces, and add them to a saucepan or pot. Sprinkle about a teaspoon of salt, then pour in some water to cover the potatoes, and place the saucepan or pot on a stove over medium-high to high heat. Bring it to a boil for about 20 minutes or until fork tender, then drain off all the water, and transfer them to a large mixing bowl.

Step 2
Mash them well, then season with salt, chili powder, and pepper, then add the corn flour and fold them all together until well mixed and shape it into a ball. Transfer it to a silicon mat, then roll it to 0.5cm thick, and cut it into patties using any glass, cup, or ring-shaped mold or cutter. Place a deep pan on a stove over medium heat, then heat up enough oil to deep fry the potato patties until about 140°C, and add the potato patties.
Step 3
Cook them for about 1 minute, then flip them over, and fry them for about 5 more minutes until golden brown and crispy. Once cooked, strain them well and shake off all excess oil, then transfer them to a tray, plate, or bowl lined with parchment paper or paper towel. Mix together the yogurt and parsley in a small bowl, then serve it on the side of the fried potatoes or use any favorite dipping sauce of your choice, and enjoy!
