Pancakes made from potatoes? Yup, you read that right. This easy crispy potato pancake by Cooking Haru will satisfy all of your savory and salty cravings. Slice the bottom of the potato to make it flat. Then begin slicing the potato into thin cuts. Do the same for all of the remaining ones.
Put all the potatoes in a bowl. Then add water and stir to remove the starch. You can wash it several times using cold water to make the process faster. Once done, remove the water.
Season the potatoes. Put salt, ground black pepper, parmesan cheese, chili powder, potato starch, and parsley into the bowl of potatoes. Then mix to cover all of the potatoes with the seasonings. The water from the potatoes will come out as you mix them.
Get a pan, don’t turn on the heat yet, and add cooking oil. Place the sliced potatoes in the pan in a circle, overlapping each other. Then turn the heat to medium. The cooking time is 5-7 minutes. When you hear the oil sizzle, put the lid and bring the heat to low. Wipe the moisture on the lid, to make it crispy. Using a toothpick, poke the potatoes to check if it’s cooked. Pour a little cooking oil before turning it over. Then lower the heat to medium and cook until crispy. When done, place it in a napkin.
Cook the second potato pancake with the same process. After both sides are cooked, put some mozzarella cheese on top. Then cover it with the first potato pancake and cook for a while. Flip it over and let the cheese melt. Now you have a super crispy potato pancake!
