Ingredients:

  • 6 large peaches
  • lemon, zested and juiced

Batter

  • ½ cup or 1 stick of unsalted butter, at room temperature
  • 1¼ cup of granulated white sugar
  • 1⅓ cups of self-rising flour
  • ⅓ cup of rolled oats
  • ⅔ cup of whole milk

For the crispy top

  • ¼ cup of granulated white sugar
  • Cold water, to spritz all over the top

Directions:

Step 1

In a large mixing bowl, add the butter and sugar, then break the butter, and mix them together until well combined. Add the rolled oats and self-rising flour, then give them a good mix until combined, add the milk, and continue to mix them until incorporated. Now, cut the peach in the middle, then twist it, and remove the center. Slice the peaches into 8ths, then place them in a large Dutch oven, and then zest and juice the lemon over them.

Step 2

Arrange the peaches nicely, then pour the batter over the top, and spread it evenly before sprinkling the sugar all over the top. Spray a generous amount of cold water all over the top to moisten the sugar, then place the Dutch oven in the middle rack of a preheated oven at 375°F for about 45 minutes until browned and crispy, and serve. Enjoy!
