Chicken Marinade
Flour Mixture
Step 1
Wash and clean the chicken, then make sure to pat them dry, and place them in a large mixing bowl. Add in the salt, sugar, garlic powder, onion powder, white pepper powder, soy sauce, beaten egg, and sliced garlic cloves, then mix everything well until evenly seasoned. Cover the bowl with plastic wrap, then place it in the refrigerator, and allow it to marinate for at least 6 hours or up to overnight.
Step 2
Once ready to fry, take the bowl of marinated chicken out of the refrigerator, then in a separate bowl, whisk together the flour, cornstarch, and potato starch until uniform. Pour the flour mixture over to the chicken pieces, then mix them until well coated, and set it aside while preheating the oil. Heat a generous amount of oil in a deep pan until it reaches a temperature of 380°F, then fry the coated chicken in batches adding them one at a time to not overcrowd the pan.
Step 3
Cook them at a temperature of 330°F for about 5 minutes, then transfer the cooked chicken to a wire rack to drain off the excess oil and rest while cooking the rest of the chicken. Second fry the cooked chicken for about 3 minutes, then transfer to a wire rack or plate lined with a paper towel, and fry the rest of the chicken. Serve and enjoy!
