Corn fritters are my ultimate comfort food or snack, what I love about them is the perfect combination of creamy, sweet, and crispy. I also love how convenient and easy it is to make them all year round, I don’t have to wait until it’s their season to satisfy my cravings because I can easily go to the nearest grocery store and purchase some canned kernels. Step 1
Heat up about 3 cups of cooking oil in a large and heavy pot or a deep fryer to about 365 degrees Fahrenheit or 185 degrees Celsius, then while waiting for it to become hot enough for deep frying, prepare the batter. Grab a medium-sized mixing bowl, then mix together the all-purpose flour, baking powder, salt, and sugar, give them a good whisk until uniform then set aside. In a separate mixing bowl, add the egg, milk, and melted shortening, then beat them lightly.

Step 2
Add the flour mixture into the wet ingredients, then stir them all together until incorporated and well combined before mixing in the corn kernels. Give them a good mix, then scoop them with a spoon, and drop the spoonful of batter into the hot oil. Let them cook and fry for about 3 minutes or until nice and golden. Remove from the oil using a slotted spoon, then place them on a plate lined with a paper towel to drain off excess oil. Fry the next batches of corn fritters.
