Step 1
Cut the steak into thin strips, then add the egg, and give them a good mix until evenly coated. Add the cornstarch, salt, black pepper, and white pepper, then continue to toss until coated, and set them aside. Place a large pan or wok on a stove over high heat, then add 3 tablespoons of oil, and heat it until very hot.
Step 2
Add the beef strips one at a time, spread them out in a single layer, and cook them in batches. Let them fry for about 5 to 6 minutes until dark brown and crispy making sure to not move them around too much to not lose their crispiness.
Step 3
Remove the beef from the pan with a slotted spoon and put it in a bowl lined with a paper towel to drain off the excess grease, then add the remaining oil, and turn the heat to medium. Add the sliced onions, then stir and saute them for about 2 minutes or until slightly softened.
Step 4
Add in the sliced chili, minced ginger, and minced garlic, then give them a good stir, and cook them for another 30 seconds. Add the rice vinegar, soy sauce, tomato puree, sugar, tomato ketchup, and sweet chili sauce.
Step 5
Continue to stir them to combine, and turn the heat to high letting it bubble for a couple of minutes until the sauce starts to reduce a little. Now, put the cooked beef back into the pan, then quickly stir for about 1 to 2 minutes or until heated through, and turn off the heat. Serve and enjoy!
