Step 1

Peel and core the apples, then dice them into ½-inch pieces, and set them aside. Place a large skillet on a stove over medium-high heat, then melt the butter, and add the diced apples followed by the sugar, lemon juice, cinnamon, and salt. Stir everything until combined, then cook them for about 5 to 6 minutes while stirring occasionally until the apples are softened and the sauce has thickened.

Step 2

Mix together the water and cornstarch, then pour it into the mixture, and give them a good stir for about 1 minute until it starts to boil and thicken, add more water if needed. Turn off the heat, then let the pie filling cool to room temperature and transfer it to the refrigerator to chill until needed. Preheat your oven to 400°F, then line a baking sheet with parchment paper, and set it aside.

Step 3

Prepare the puff pastry sheet on a lightly floured surface, then shape it into a 14×15-inch rectangle, and then cut it into 18 rectangles. Fill each pastry rectangle with about 2 to 3 tablespoons of apple filling, then fold one end over, and crimp the edges to seal as demonstrated in the video tutorial. Cut a few slits on top, then brush them with eggwash, and sprinkle some sugar.

Step 4

Place them on the prepared baking sheet, then put them in the preheated oven, and let them bake for about 20 to 30 minutes or until golden brown, puffed up, and crisp. Once done baking, remove them from the oven, then place them on a wire rack, and let them cool until warm or room temperature. Serve and enjoy!
