This creamy white chicken chili recipe by Mel’s Kitchen Cafe on YouTube is one of my favorite dishes to make, especially for busy weeknights or when I simply don’t have the energy to cook. It’s super easy to prepare because all you have to do is dump everything in the crockpot and let it do its magic while you wait and relax.

Step 1
Put the whole chicken breasts in a 5 or 6-quart crockpot, then add the chopped onion, garlic powder, beans, garlic, and green chiles, and season them with salt, ground cumin, dried oregano, pepper, and cayenne pepper.
Step 2
Reduce the chicken broth to 12 ounces or about 1½ cups and pour it in over the other ingredients. Stir everything until incorporated, then cook the chili on a low setting for about 5 to 7 hours, and then remove the chicken to a cutting board.
Step 3
Shred the chicken into bite-sized pieces and put them back into the crockpot, then in a small bowl, whisk together the sour cream and whipping cream until smooth and combined, and pour it into the crockpot. Continue to cook the chili at a low setting until warmed through, then serve, and enjoy!
