Step 1
Start by separating the egg yolks from the egg whites, then set them aside. In a saucepan, add the sugar, flour, whole milk, and salt, then place on a stove over medium-low heat, and whisk them together frequently for about 5 to 10 minutes or until it comes to a low simmer and begins to thicken. Beat the egg yolks, then add about ¾ cup of the mixture to the beaten yolks, and stir them together to combine before transferring everything to the saucepan. Whisk them together constantly and continue to cook for about 5 minutes until thick and creamy, then turn off the heat, and add the butter and vanilla. Give them a good stir until smooth, then let the mixture cool slightly for about 10 minutes.

Layer the wafers at the bottom of your baking dish, then top it with a single layer of sliced bananas and spread half of the pudding mixture evenly. Repeat the layers until you’ve used everything but save some wafers for topping, and let the pudding mixture seep into open spaces. Cover it lightly with plastic wrap, then put it in the refrigerator, and let it chill for at least 4 to 8 hours or up to overnight. When ready to serve, beat the heavy cream until soft peaks form, then incorporate the powdered sugar halfway through, and spread it on top of the banana pudding before sprinkling the crushed leftover wafers. Serve and enjoy!
