Materials:

  • 2 cups of pasta, cooked and drained
  • ½ cup of cucumber, chopped
  • ½ onion, finely chopped
  • ½ cup of bell peppers, chopped, green, and red
  • ½ cup of sweet corn, boiled
  • ½ cup of red kidney beans, boiled
  • ¼ cup of gherkin or olives
  • 1 tsp of salt
  • 1 tbsp of black pepper
  • 2 tsp of sugar
  • ½ cup of mayonnaise
  • ½ cup of salad cream
  • ½ cup of yogurt

Cook the pasta according to the package instructions, then drain off all the water and add it to a large mixing bowl. In the same bowl, add the cucumber, onion, bell peppers, boiled sweet corn, boiled red kidney beans, and gherkin or olives, then mix them all together until well combined, and season them with salt, pepper, and sugar. Give them a good mix until combined, then add the mayonnaise, salad cream, and yogurt, and continue to toss and mix until well combined and incorporated. Serve immediately or chill before serving and enjoy!
