Preheat your oven to 400 degrees F and lightly grease your 9×13 casserole dish. Next, bring a large pot of water to a boil, then add your egg noodles and cook them according to the package instructions. In another saucepan, melt a/4 cup of butter over medium heat, then add the diced onion. Saute the onion until tender. (About five to seven minutes.) Once the onions are soft, add 1/4 cup of all-purpose flour and three cloves of minced garlic. Cook for about 90 seconds, then pour in 2 cups of chicken broth and 2 cups of milk. Season with 1/4 tsp of salt and 1/4 tsp black pepper. Bring it to a simmer. After it thickens up, add 2 cups of frozen peas, 2 cups of shredded cheddar cheese, and 2 cups of cooked chopped chicken. Turn off the heat and stir everything well.

Next, drain your egg noodles and pour them into your prepared casserole dish. After this, grab your sauce and pour it all over the egg noodles. Mix it until all of the egg noodles are evenly coated. In another bowl, combine 1 cup of crushed Ritz crackers, 1/4 cup of grated parmesan cheese, and 3 tsp of olive oil. Sping this mixture right on top of the casserole. Bake in a 400-degree F oven for 15 to 20 minutes.
