Ingredients:

  • 16 ounces penne pasta
  • 2 chicken breast
  • 1 tbsp cajun seasoning, or more as needed
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • ½ tsp paprika
  • ½ tsp old bay seasoning
  • Oil, as needed
  • 1 small onion, chopped
  • ½ medium-sized bell pepper, chopped
  • 4 ounces diced tomatoes
  • 2 cups heavy cream
  • 1 tsp minced garlic
  • 4 ounces of cream cheese
  • ½ cup parmesan cheese

Directions:

Step 1

Lay plastic wrap on top of the chicken, then pound them with a meat tenderizer until wider and thinner as shown in the video, and then drizzle some oil all over them. Massage and rub the oil all over them until all sides are coated, then in a small bowl, mix together the cajun seasoning, onion powder, garlic powder, dried parsley, paprika, and old bay seasoning until uniform, and sprinkle half them all over the chicken.

Rub the seasonings in, then flip the chicken over, and season the other side with the remaining seasoning rubbing them in as well until well coated. Set the chicken aside and let them marinate for about 10 to 15 minutes while cooking the pasta. Fill a pot with water, then add some chicken bouillon or cajun seasoning and salt, and bring it to a boil over medium-high to high heat.

Step 3

Add the pasta, then cook them for about 7 to 10 minutes until al dente or according to the package instructions, and once cooked, drain all of the water out and make sure to not rinse. Next, place a deep skillet on a stove over medium-high heat, then drizzle some oil, and once hot enough, add the chicken. Cook them for about 5 minutes on each side or until nice and cooked through, then set them aside on a plate, and in the same pan, add the chopped onions, bell peppers, and tomatoes.

Step 4

Give them a good toss, then add the minced garlic, and cook them for about a minute or until the veggies are softened. Now, add the heavy cream and cream cheese, then stir them around until combined and melted, season it with some more cajun seasoning if desired, and add the parmesan cheese. Give them a good mix, then add the pasta, and mix them until well coated.

Step 5

Cut the chicken into strips, then reserve some for garnish later, and continue to cut the rest into smaller bite-sized pieces. Add the chicken chunks into the pasta, then turn the heat to low, and give them a good toss until well combined. Sprinkle some freshly chopped parsley, then give them a good mix, and then turn off the heat. Top it with the reserved cut chicken, then serve, and enjoy!
