Ingredients for Cream Cheese-Stuffed Salmon:
- 1/3 cup of red or white onion, minced
- 2 tbsp of freshly chopped dill or 1½ tsp of dried dill
- ½ cup of Gouda or Fontina cheese, freshly shredded
- 1 tsp of grated lemon zest
- ½ lemon
- 2 tsp of fresh lemon juice, plus more to taste
- ¼ tsp of salt, plus more to taste
- ¼ tsp of fresh ground black pepper, or more to taste
- 2 tsp of caraway seeds, whole or coarsely ground
- 2 oz of plain cream cheese, softened
- 4 (6-8 oz) salmon fillets
- 2 tsp of extra virgin olive oil, plus more for serving
How to Make Cream Cheese-Stuffed Salmon:
Step 1
Preheat your oven to 425°F, line a baking sheet with parchment paper, and set it aside. In a large bowl, add the onion, dill, cheese, lemon zest, lemon juice, salt, pepper, caraway seeds, and cream cheese, then mush them together until combined and paste-like.
Step 2
Cut the salmon filets right down the middle to create a pocket, then pull them open, and transfer them to the prepared baking sheet. Season the salmon filets with salt and pepper to taste, then squeeze over the lemon, and stuff them with the prepared filling. Drizzle some olive oil over them, then place them in the preheated oven, and let them bake for about 8 to 12 minutes. Serve and enjoy!
