  • 16 oz or 2 (8 oz) blocks of cream cheese, at room temperature
  • 1 cup of white cheddar cheese, shredded
  • 1 cup of chopped cranberries, divided
  • 1 cup of chopped pecans, divided
  • 2 tbsp of chopped chives or green onion, divided

Step 1

In a large mixing bowl or bowl of a stand mixer, add the cream cheese and white cheddar cheese, then chop the cranberries, pecans, and chives or green onions, and add in half portion of each to the bowl as well.

Step 2

Beat them until well combined, then scrape the sides of the bowl, and transfer the cheese mixture to a saran or plastic wrap. Form the cheese into a ball or any shape that you want, then place it in the refrigerator, and let it chill for about 1 hour until slightly firm.

Step 3

In a Ziploc bag, add in the remaining half of the chopped cranberries, pecans, and chives or green onions, then mix them until evenly combined, and transfer the mixture to a plate. Get the cheese ball out of the fridge and then remove the plastic wrap.

Step 4

Roll the ball on the nuts and berries mixture until well coated. Once all of the nuts and berries stick to the cheese ball, wrap them again with plastic, then put them back in the refrigerator, and let them chill until ready to serve.
