Ingredients for Cranberry Brie Pinwheels:

  • 12 oz of soft brie cheese, at room temperature
  • 1 cup of fresh mozzarella cheese, shredded
  • 4 tbsp of fresh parsley, chopped
  • ¾ cup of dried cranberries
  • 4 spinach wraps
  • 1 pound of sliced deli turkey
  • 8 sprigs of fresh rosemary

Step 1

In a medium-sized mixing bowl, add the brie cheese and mozzarella, then beat them together until combined, add ¼ cup of dried cranberries and 1 tbsp of fresh parsley, and give them a good stir until combined.

Step 2

Lay a spinach wrap on a flat surface, then spread ¼ of the cheese mixture on one side of the wrap, and sprinkle some parsley. Add the dried cranberries, then lay 4 to 6 slices of turkey on the bottom, and roll the wrap tightly as shown in the video.

Step 3

Repeat with the remaining ingredients, then place them in the refrigerator, and let them chill for about 5 minutes until set and firm. Once ready, cut the wraps into 4½-inch thick pieces, then arrange them on a platter or board until they look like a Christmas tree, and serve. Enjoy!
