Cracker Barrel is one of my all-time favorite restaurants to go to and I love almost everything on their menu. I have a couple of dishes that I love ordering and one of them is broccoli cheese casserole and I love sharing it with the whole family.

We enjoy eating it and since it’s a crowd favorite, I decided to give it a try and make my own version at home. After checking multiple video tutorials, I settled on this easy and simple copycat recipe by Stephanie Manley on YouTube.
Ingredients for Broccoli Cheese Casserole:
- 1 can of cream of chicken soup
- 16 ounces of whole milk
- 16 ounces of American cheese
- 8 ounces of broccoli, cut into bite-sized pieces
- 4 cups of cooked rice
- 1 cup of Colby cheese, shredded
- 32 Ritz crackers or 1 standard sleeve, crushed
- 4 ounces of butter, melted
How to Make Broccoli Cheese Casserole:
Step 1
Preheat your oven to 350°F, then place a large pot on a stove over medium-low heat, and add in the cream of chicken soup, whole milk, and American cheese.
Step 2
Allow them to cook while stirring occasionally until melted, then add the broccoli, and cook them for an additional 8 minutes. Turn off the heat, then remove the pot from the stove, and set it aside.
Step 3
Place the cooked rice on the bottom of a 9×13-inch baking dish, then spread it in an even layer, and pour the broccoli cheese mixture over the top evenly.
Step 4
Sprinkle the shredded Colby cheese on top, then in a small bowl, mix the crushed crackers and melted butter until well combined, and sprinkle them over the cheese layer.
Step 5
Place the casserole in the preheated oven, then allow it to bake for about 10 to 15 minutes or until the crackers turn golden brown, and serve. Enjoy!
