Ingredients:

Cake batter

  • 4 egg yolks
  • ¼ cup sugar
  • ¼ cup oil
  • 1/3 cup milk
  • 1 tsp vanilla
  • 1 cup all-purpose flour
  • ½ tsp salt
  • 4 egg whites
  • ½ tsp cream of tartar
  • 1/3 cup of sugar

Frosting

  • ½ cup softened butter
  • ½ cup cream cheese
  • ¼ cup condensed milk
  • ¼ cup heavy cream
  • Cheddar cheese, grated, for the topping

Directions:

Step 1

In a large mixing bowl, add the egg yolks and sugar, then break the yolks apart, and whisk them together until pale yellow and fluffy. Add the oil, milk, and vanilla, then continue whisking them together until well combined before sifting over the all-purpose flour and salt and then continue mixing them together until smooth and no flour streaks are visible. In a separate bowl, add the egg whites and cream of tartar, then beat them together with a handheld mixer until frothy, then gradually add the sugar while continuously beating until stiff peaks form. Give the egg yolk mixture a nice fold, then add a dollop of the egg white mixture, and fold them together to loosen the base mixture. Once well combined, add the egg yolk mixture to the remaining egg white mixture, then fold them together to combine, and pour on an 8x4x2 oval pan lined with parchment paper.

Step 2

Bake the cake in a preheated oven at 160°C or 320°F for about 35 to 40 minutes, then let it cool completely, and prepare the frosting while waiting. In a large mixing bowl, add the butter, then beat until softened and smooth, add the cream cheese and condensed milk, and continue to beat them together until smooth and combined. Add the heavy cream, then beat until smooth, and fold nicely. Unmold the cooled cake and remove the parchment paper as well, then cut it through in half, and place one layer on a serving plate. Spread a dollop of the frosting on top of the cake layer, then place the other half layer on top, and cover them with the remaining frosting. Grate the cheese, then place it all over the cake until completely covered, serve, and enjoy!
