I remember always eating and requesting cosmic brownies from my Mother when I was still a kid, and I loved every piece up to the last bite. Now, that I’m older, I can skip the part where I need to buy them from the store because I can make them in the comfort of my home with the help of this video tutorial by Sugar Spun Run on YouTube!

Ingredients:

Brownie

  • 12 tbsp butter
  • ¾ cup natural cocoa powder
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs + 1 large egg yolk, lightly beaten
  • 1¼ cup all-purpose four
  • 1 tsp cornstarch
  • ½ tsp salt

Frosting

  • 1 cup semisweet chips
  • ½ cup milk chocolate chips
  • ⅓ cup heavy cream
  • 1 tsp vanilla extract
  • ⅛ tsp salt
  • 2 tbsp candy-coated chips

Directions:

Step 1

Preheat your oven to 350°F. Lightly grease a 9×13 inches baking pan, then dust it with flour, and line it with parchment paper before setting it aside. In a large microwave-safe bowl, add the butter cut into smaller pieces, then heat it up in the microwave until completely melted, add the cocoa powder, and stir them together until incorporated.

Step 2

Stir in the sugar until combined, then add the eggs one at a time making sure to stir well in between each addition until well combined, add the vanilla extract, and continue to stir until well mixed. In another mixing bowl, add the flour, cornstarch, and salt, then give them a good whisk, and gradually incorporate them into the egg mixture while whisking continuously until well combined.

Step 3

Pour the batter into the prepared pan, then spread it evenly, and place it in the preheated oven at 177°C or 350°F. Allow it to bake for about 16 to 18 minutes, then let it cool down, and while waiting, prepare the frosting. Place a medium-sized saucepan on a stove over medium-low heat, then add the chocolate chips and heavy cream, and stir them together until melted, combined, and smooth.

Step 4

Turn off the heat and remove the pan, then add the vanilla extract and salt, then stir them well to combine. Let the frosting cool down for about 5 to 10 minutes, then pour it all over the brownie, and spread it evenly. Sprinkle the candy-coated chips all over the top, then let it sit on the counter for about 1 hour or in the refrigerator for about 15 minutes until hardened. Cut it into bars, then serve, and enjoy!
