Ingredients:

  • 3 fresh corn
  • 1½ cups of all-purpose flour
  • 1¼ cups of cornmeal
  • ¼ cup of sugar
  • 2½ tsp of baking powder
  • ½ tsp of baking soda
  • 1 tsp of salt
  • 2 large eggs
  • 1 large egg yolk
  • ¾ cup of greek yogurt
  • 2/3 cup of milk
  • ½ cup of melted butter

Directions:

Step 1

The first thing that you have to do is to cut off the corn kernels out of the cob and set them aside for later. In a large mixing bowl, add the all-purpose flour, corn meal, sugar, baking powder, baking soda, and salt, then whisk them all together until well combined and uniform before adding about 2 cups of corn kernels, and reserve the rest for toppings later. Give them a good mix until the corn kernels are incorporated and distributed, then set it aside, and prepare the wet ingredients. In a separate mixing bowl, add the eggs, egg yolk, yogurt, milk, and melted butter, then whisk them lightly to combine, make a hollow space at the center of the flour mixture, and gradually incorporate the egg mixture while mixing continuously.

Step 2

Line a loaf pan with parchment paper, then transfer the batter, and spread evenly. You can make the other half of the batter into muffins, simply grease the muffin pan with melted butter, then transfer and divide the batter on the pan evenly, and top them with the remaining corn kernels. Place them into the preheated oven at 400°F then let them bake for about 10 to 12 minutes or until nice, golden, and cooked through. Unmold the bread, then remove the parchment paper, and slice. Serve and enjoy!
