I’ve always loved eating at In-N-Out but for the longest time, I never thought that my favorite French fries could get any better than they already are until I found this recipe by ThatDudeCanCook on YouTube. It was quite a challenge preparing this but it was so worth it and I’d gladly do it again, go ahead and check this out, and see for yourself!

Ingredients:

Crispy French Fries

  • 2½-3 pounds of Russet potatoes
  • 4 quarts or 3.7 liters of water
  • 1 tbsp of kosher salt
  • 2 tbsp of white vinegar
  • Peanut oil, or any oil, for frying
  • Salt, to taste, for seasoning

Animal-Style Onions (you can double this recipe)

  • 1 large sweet onion
  • 1 tbsp of neutral oil
  • 1 tbsp of unsalted butter
  • 1 tsp of salt

Animal-Style Sauce

  • ¾ cup of mayonnaise
  • 5 tbsp of ketchup
  • 3 tbsp of sweet pickle relish

Additional

  • Cheese slices, for serving

Directions:

Crispy French Fries

Step 1: Peel and cut the potatoes into ¼-thick pieces, then add them to a large bowl filled with water, once done cutting, drain off all the water. Give them a good rinse about 2-3 times to make sure all of the excess starch is gone, then transfer them to a pot, and cover them with cold water.

Step 2: Add the kosher salt and white vinegar, then turn on the heat to a high setting, and bring it to a light simmer. Once simmering, let it cook for about 5 to 6 minutes before turning off the heat, drain off all the water, then transfer the potatoes to a baking sheet lined with a towel to drain off all the water.

Step 3: Leave them there for about 5 minutes to dry, then preheat the oil in a Dutch oven to 275°F, start frying the potatoes in batches, and spread the fried ones on a baking sheet lined with paper towels in a single layer.

Step 4: After 30 to 40 minutes, preheat the oil to 400°F, then refry the potatoes for only about 4 to 5 minutes, and place them on a baking sheet lined with a paper towel. Transfer them to a large bowl, then season them immediately with salt, and set them aside.

Animal-Style Onions

Dice the onion well, then place a Dutch oven on a stove over medium heat, and let some oil heat up. Add the butter, then let it melt before adding the chopped onions, and season them with salt. Give them a good toss and cook them slowly until they start to brown and caramelize, then turn off the heat, and remove them from the pan and into a serving dish.

Animal-Style Sauce

In a small bowl, mix together the mayonnaise, ketchup, and sweet pickle relish together until combined and uniform. Place the fries in a container or heat-proof dish, then place cheese slices on top, and broil them until nice and melted. Place the animal-style onions on top, then cover them with the sauce, and serve. Enjoy!
