I love Costco’s chicken bake and since I purchase it very often, I thought why not just make it at home? That way I can have them at a more loaded portion and enjoy them anytime I want! So, I tried looking for a great copycat recipe online that I could follow, and I found this one by Allrecipes on YouTube.

This is very easy to make and it tastes so good that it’s almost even better than the original. Plus, if you have leftover rotisserie chicken, then you can use that, and I assure you it would make the chicken bake taste more delicious. Step 1
Let your pizza dough rest at room temperature for about 1 hour before using. Preheat your oven to 350°F, then line a baking sheet with aluminum foil, and lay the bacon strips in a single layer. Place it in the preheated oven, then allow it to bake for about 15 minutes or until brown and crispy, and transfer it to a plate lined with paper towels to drain off the excess oil.
Step 2
Once the cooked bacon is cool enough, crumble it, and set aside, then make sure to leave the oven on. Season the chicken salt, pepper, and garlic powder and set it aside, then place a large oven-proof skillet on a stove over medium-high heat, and heat the oil.
Step 3
Place the seasoned chicken in the hot oil, then cook it for about 5 minutes or until golden brown, and then cook the other side for 1 more minute. Pour in some water, then transfer the chicken to the oven, and continue to cook the chicken for about 17 to 20 minutes or until it reaches an internal temperature of 165°F.
Step 4
Once done baking, place the skillet on the counter to let the chicken cool down, then chop it into smaller pieces, and set it aside. Increase the temperature of your oven to 400°F, then line a baking sheet with parchment paper, and set it aside.
Step 5
Dust your work surface with flour, then divide the pizza dough into 3 portions, and roll each in a large circle at about 12 to 13 inches wide. Spread some dressing over the dough leaving an inch of space around the edges, then sprinkle 2 tablespoons of cheese, and put the chopped chicken on top followed by the bacon, green onions, and remaining Italian cheese blend.
Step 6
Fold the dough as demonstrated in the video and pinch the edges to seal, then work it into a 12-inch log, and place the dough log on the prepared baking sheet with its seam side down. Brush the top with beaten egg, then sprinkle the cheese blend over the top, and put it back in the oven to bake for about 20 minutes or until golden brown. Serve and enjoy!
