Ingredients:

Dough

  • 1 cup of bread flour or all-purpose flour
  • 2.7 ounces of warm milk
  • 1 egg
  • 2 tablespoons of sugar
  • 2 tablespoons of condensed milk
  • 1 teaspoon of salt
  • 1½ teaspoons of instant dry yeast
  • ¼ cup of unsalted butter, room temperature

Glaze

  • 3 tablespoons of unsalted butter, melted
  • 4 tablespoons of condensed milk

Directions:

Step 1

In a large bowl, whisk the egg, sugar, condensed milk, and warm milk together until well combined. Add in the instant dry yeast, then whisk until melted before adding in the flour and salt, switch to a spatula to mix the ingredients better. Then, knead it with your hands, add and mash the butter onto the dough, continue kneading until the butter is incorporated and the dough becomes smooth. Cover and ferment in a warm place until it rises up to 2-3 times its original size for about an hour. Poke or punch lightly to release the air inside the dough, then transfer it to a Silpat or silicone mat, and smoothen. Divide the dough into 8 equal parts, then shape each one into a ball, cover it again and ferment until it doubles in size for about 20 minutes.

Step 2

In a small cup or bowl, mix the melted unsalted butter and condensed milk together until well combined. Line a 7-inch round pan with parchment paper, then brush some condensed milk and butter mixture at the bottom and sides. After degassing the dough, reshape them into a ball, then flatten and make it longer with a rolling pin, roll the dough from the side, pinch the ends, and seal. Extend its length by rolling and pushing it outward with your hands, twist, and make a not. Place each of the dough on the prepared pan, repeat the process until you’ve knotted all dough balls, then let it rise at room temperature for 30 minutes. Bake it in a preheated oven at 338°F for 20-25 minutes, unmold then brush it with the remaining condensed milk and butter mixture.
