This cheesecake, like many others, requires no baking at all, and it’s so good that you just can’t resist it. You can decorate and top this cheesecake with whatever you want and guaranteed it will taste just as delicious.

Step 1
Crush the biscuits and add the melted butter, then give them a good mix, and transfer it to the bottom of a mousse mold lined with parchment paper. Press it nice and flat at the bottom, then place it in the refrigerator, and allow it to set until ready. Mix the gelatin in the water, then soak it for about 10 minutes, and set it aside.
Step 2
Add the softened cream cheese to a mixing bowl, then add in the instant coffee powder and sugar, and beat them until combined. Add the condensed milk and vanilla bean paste, then keep mixing to combine, melt the soaked gelatin in the microwave for about 20 seconds, and add it to the cheesecake batter.
Step 3
Give them a good mix, then add about half of the whipped cream, and keep mixing to combine. Separate 1½ cups of the batter in another bowl, then add the whipped cream to the dark chocolate and let it melt. Add it to the cheesecake batter, then mix until combined, and pour it into the mousse mold and over the crust spreading it out evenly.
Step 4
Put it back in the fridge and let it set for about 30 minutes, then add the coffee cheesecake batter, and spread it evenly. Put it back in the fridge and let it set for about 2 to 3 hours, then lightly beat the whipped cream, add the warm whipped cream, and then pour it into the melted chocolate. Give them a good mix, then pipe it on the cheesecake, and serve. Enjoy!
