Combine 1 1/2 tbsp sugar and two eggs, then mix well. Add this to the coconut flakes and mix until fully combined. Once done, divide the mixture into a 12-cup muffin pan lined with cupcake liners, then push them to the bottom as well as the sides (use the bottom of a small glass to mold it faster). Place it in a 325 degrees F oven and bake for 20 minutes. After baking, let them cool down, then remove the cupcake liners. Set them aside.
In a saucepan, add 1 egg yolk, 2 tbsp sugar, 1 1/2 tbsp cornstarch, and 270 ml milk. Whisk to combine, then bring it to a boil. Once creamy, remove it from the heat, then add 2 cups of white chocolate. Mix together until the chocolate fully melts. Divide the mixture into the coconut cups, then sprinkle some more coconut flakes on top. Serve and enjoy!
