If you love coconut-flavored dessert recipes, you have to try this amazing coconut cake by The Stay At Home Chef. This homemade cake is way better than any coconut cake I have tried in any bakery or cafe. Sometimes, the ones in the bakery can be dry and underwhelming, but this one is absolutely good. The cake is fluffy and soft, and the cream cheese frosting is flavorful.

This cake is definitely packed with tropical flavors. At first, I was hesitant to make this recipe, but to my surprise, it was actually easy. Even if you have little to no baking experience, it will still turn out heavenly. Everything about this cake is just perfect. It is great for birthday parties, celebrations, gatherings, or just a delicious dessert at home.

Start by greasing three 9-inch pans, then lining the bottom with a parchment paper. Preheat your oven to 350F.
In a large mixing bowl, cream the butter, oil, and sugar using a hand mixer until smooth. Beat in the coconut extract and egg whites for about 2 minutes until smooth. Add the coconut milk and sour cream until just combined.
Add the cake flour, baking powder, and salt into the mixture and mix until just combined.
Divide the batter among the three prepared pans. Place inside the preheated oven and bake at 350F for about 25 to 30 minutes. Once done baking, let them sit in the pans for about 5 minutes and then transfer them to a wire rack to let them cool completely.
Make the frosting. Beat the cream cheese and butter together for 1 minute using a hand mixer until light and fluffy. Add the coconut extract and mix until just combined for about 10 seconds.
Gradually add in powdered sugar, one half cup at a time until smooth. Mix after every addition.
Frost and layer the cakes with frosting. Coat with coconut flakes.
