What I love about this cake is its simplicity and how easy it is to make, but at the same time, it is so flavorful and yummy that you’ll surely consume more than just one serving because you’d want bite after bite. Ingredients:

  • ½ cup of unsalted butter
  • ½ cup of caster sugar
  • 2 whole egg
  • ½ tsp of vanilla extract
  • 2/3 cup of cake flour
  • ½ tsp of baking powder
  • 20 ml or 4 tsp of fresh milk
  • 1/3 cup of dried shredded coconut

Directions:

Step 1

In a measuring cup or mixing bowl, whisk together the egg and vanilla extract, then in a separate mixing bowl, add the softened butter and sugar, and break the butter until creamy using a spatula. Switch to a handheld electric mixer, then beat them together before pouring some of the egg mixtures, and continue to beat until incorporated. While still beating, pour the rest of the egg mixture gradually until combined, then scrape the sides, and continue to beat until smooth. Add the baking powder to the flour, then sift them over the mixture, and fold them together until well combined.

Step 2

Pour the milk and continue to fold to incorporate, then add the shredded coconut making sure to reserve some for later, and give them a good mix until combined. Transfer the batter to a 6×3 loaf pan, then spread it evenly, and sprinkle the reserved shredded coconut all over the top. Place it in a preheated oven at 170°C or 340°F, then allow it to bake for about 30 to 35 minutes or until a toothpick inserted at the center comes out clean, and let it cool down. Once the cake has cooled down, unmold it and transfer it to a plate or dish, then serve, and enjoy!
