Ingredients:

  • Cooked chicken breast, sliced into cubes
  • Salt pepper
  • Garlic powder
  • Parsley flakes
  • Heavy whipping cream
  • 1 tbsp butter
  • 1½ bag (12 ounces) frozen veggies
  • 1 medium-sized onion, chopped
  • Potatoes, peeled and chopped
  • 2 cans cream of chicken soup
  • 1 can cream mushroom soup
  • Pre-made pie crust deep dish
  • 2 egg yolks with a bit of water

Directions:

Step 1

Boil the potatoes in a large pot filled with water for about 15 minutes or until fork-tender. While the potatoes are boiling, place a large saucepan on a stove over medium-high heat, then heat up the oil. Add the onions and sea salt, then saute until the onions are nice and translucent. Put the chicken breast cubes, garlic powder, black pepper, and a bit of sea salt to taste, or skip the salt if you want. Add in a bag and a half of frozen veggies, mix them together until well combined. Reduce to low heat, then add in the cream of chicken soup, stir it around, then add the cream of mushroom, heavy whipping cream, and butter, mix them together until well combined.

Step 2

Drain the potatoes, then add them into the mixture, taste, and adjust the flavor, seasoning, or creaminess. Prepare your premade pie shell, then add the mixture to the dish, sprinkle with parsley flakes on top, then place the pie crust. Use your fingers to clump in the sides, then press it with a fork afterward. Brush all of the egg wash on the crust, then cut the center for the steam to exit. Bake it in a preheated oven at 325 degrees for about 50 minutes until the crust is golden brown.
