For the caramel. Add 1/2 cup of sugar to a pot and place over heat. Cook the sugar for about 5 to 7 minutes until it turns into a dark amber caramel syrup. Continuously stir to avoid burning.
Once you have caramel syrup, drizzle it on a 9-inch flat-sided cake pan. Rotate the pan to spread the caramel syrup evenly.
Peel and slice the apples in quarters. Place in a big bowl.
Add 2/3 cup of butter, 3/4 cup of sugar, 5.3 oz of water, and 2 teaspoons of vanilla extract in a pot. Mix and bring the mixture to a boil.
Once boiling, add the sliced apples to the mixture and 1 teaspoon of cinnamon. Mix, then let the apples cook for about 10 minutes or until you can easily and smoothly poke the center of the apple with a knife. Remove the apples from the pie.
Arrange the apple quarters very tightly in a circle around the pan. Gently press them with your hands to ensure there are no gaps in between.
Lay the puff pastry on a parchment paper flat. Place another pan measuring 9-inches upside down into the center of the puff pastry. Trace and cut the circle using a knife, and remove the excess pastry. Poke holes all over the circle puff pastry using a fork.
Place the puff pastry on top of the apples and press the edges toward the apples.
Place in a 356 F preheated oven and bake for about 35 minutes. After baking, let it cool at room temperature for about 1 hour before removing it from the mold onto the serving platter. You can serve it with creme fraiche or a scoop of vanilla ice cream.
