This breakfast idea is super fluffy and soft that you’ll feel as if you are munching on clouds. It is also very delicious that you won’t be able to stop eating after just one piece of this cinnamon roll pancake.

Pancake batter

  • ¾ cup+2 tbsp milk, at room temperature
  • 2 tsp white vinegar or lemon juice
  • 1 large egg, at room temperature
  • ½ tsp vanilla paste or vanilla extract
  • 3 tbsp vegetable oil, flavorless like sunflower, canola
  • 2 tbsp sugar
  • 1½ cup all-purpose flour
  • ¼ tsp salt
  • ½ tsp baking powder
  • ½ tsp baking soda

Cinnamon filling

  • ¼ cup unsalted butter, at room temperature
  • 1/3 cup brown sugar
  • About 1 tbsp cinnamon powder

Directions:

Step 1

First, prepare the cinnamon filling. In a medium-sized mixing bowl, add the softened butter, sugar, and cinnamon, then mix them together with a spatula until well combined, creamy, and smooth. Transfer the filling to piping or a Ziploc bag and set it aside. In a large mixing bowl, add the milk and vinegar, then mix them together until well combined, and let it rest for about 10 to 15 minutes. Add the egg, vanilla, oil, and sugar to the mixture, then mix them together until combined. Sift over the flour, baking powder, baking soda, and salt, then gently mix them in until almost completely combined, make sure not to overmix, there will be some small lumps but it’s fine. Cover the mixture and let it rest until needed.

Step 2

Place a nonstick pan on a stove over medium heat, then heat it up, and grease it with some butter, absorb the excess grease with a paper towel. Get the pancake batter, then scoop up about 1/3 cup, then pour it into the hot pan carefully. Once a few small bubbles started appearing on top of the pancakes, swirl the top with the prepared cinnamon filling on the piping bag, then flip the pancake, and let the other side cook for about 50 seconds. When it’s done cooking, flip it over again so that the swirl is facing up, then transfer it to a serving plate, and stack them as many as you want before topping them with some sugar glaze (mix the icing sugar with water or cream cheese). Serve and enjoy!
