Ingredients for Christmas Cookies:
- 1 cup of unsalted butter, softened
- 1⅔ cups of granulated sugar
- 2 eggs, at room temperature
- 2 tsp of vanilla extract
- 1 tsp of peppermint extract
- 3 cups of all-purpose flour
- 2 tbsp of cornstarch
- 1 tsp of baking powder
- 1 tsp of baking soda
- 1 tsp of salt
- Green food coloring, optional
- 1 cup of red and green M&Ms, plus more for topping
How to Make Christmas Cookies:
Step 1
Preheat your oven to 350°F, then line the baking sheets with parchment paper, and set them aside. In a large mixing bowl, add the butter and sugar, then beat them together until light and fluffy, and then add the eggs, vanilla extract, and peppermint extract.
Step 2
Stir everything thoroughly until well combined and incorporated, then set the wet mixture aside. In a separate bowl, add the flour, cornstarch, baking powder, baking soda, and salt, then give them a good whisk, and gradually add them to the wet mixture.

Step 3
Stir them well in between each addition until incorporated, then add the food coloring, and continue to stir until evenly combined. Add the M&Ms and fold them into the mixture using a spatula until evenly distributed.
Step 4
Scoop the batter out about 1½ tablespoons, then shape it into a smooth ball, and place it on the prepared baking sheet. Proceed to shape the remaining batter and make sure to space them apart at least 2 inches evenly.
Step 5
Place them in the preheated oven, then allow them to bake for about 8 to 10 minutes, and then gently press down some more M&Ms on top of the cookies. Allow them to cool completely, then serve, and enjoy!
