Ingredients for Chocolate Rum Snowballs:

  • (11-ounce) box of vanilla wafers
  • ¾ cup of powdered sugar, plus more for rolling
  • 2 tbsp of unsweetened cocoa powder
  • ¼ cup of mini dark chocolate chips
  • 2 tbsp of maple syrup
  • 1/3 cup + 1 tbsp of dark rum, plus more as needed

For Coating

  • 3 cups of sweetened coconut, finely shredded
  • 10 ounces of white chocolate, chopped into small pieces

How to Make Chocolate Rum Balls:

Step 1

Add the vanilla wafers, powdered sugar, cocoa powder, and chocolate chips in a food processor, then blend them until fine crumbs, and add in the maple syrup and rum.

Step 2

Keep pulsing them until they come together like a dough, then scoop out a small portion, and roll it into a smooth ball at about 1½ inches. Put it on a plate, then proceed to shape the remaining dough, and cover them with plastic wrap.

Step 3

Place them in the refrigerator, then allow them to chill, and prepare the white chocolate coating waiting. Fill a saucepan with water, then place it on a stove over low heat, and bring it to a simmer before placing a heat-proof bowl over it.

Step 4

Put 80% of the white chocolate in the bowl, then let it melt without stirring until it reaches a temperature of 105°F, and add in the remaining white chocolate before stirring them together until smooth and runny.

Step 5

Coat the rum ball with powdered sugar or melted white chocolate before coating it with shredded coconut. Place them in a bowl or plate, then wrap them with plastic, and chill in the refrigerator until ready to serve. Serve and enjoy!
