Preheat your oven to 350°F, then in a large mixing bowl, add the cookie mix, vegetable oil, strong brewed coffee or water, and egg, and then stir them all together until combined and a soft dough forms. Transfer the dough to the bottom of a 9×13-inch baking dish, then spread it out evenly, and put it in the preheated oven. Allow it to bake for about 12 to 15 minutes or just until set, then set it aside, and let it cool down for about 30 minutes or until completely cooled. In a separate large mixing bowl, add the cream cheese and sugar, then beat them together with an electric hand mixer over medium speed until smooth, add the whipped topping and chopped mini peanut butter cups, and fold them together until combined.

Transfer the filling over the baked cookie base, then spread it evenly, and set it aside while preparing the topping. In a small microwave-safe bowl, add the peanut butter, milk, and sugar, then whisk them together until smooth and combined, and heat it up in the microwave on a high setting for about 30 to 60 seconds making sure to stir at 30-second intervals. Drizzle the topping all over the top, then melt the chocolate, and drizzle it all over the top as well. Sprinkle the peanuts, then put it in the refrigerator, and let it chill for about 1 hour or until set. Cut into bars, then serve or refrigerate it again, and enjoy!
