Frosting
Chiffon Cake
Egg Mixture
Step 1
For the frosting, beat the butter until smooth, then sift over the icing sugar and pure cocoa powder, and add the vanilla extract. Beat everything together until smooth and combined, then add the melted chocolate and whipping cream, and continue to beat until light and fluffy. Put it in the fridge and let it chill until needed.
Step 2
Now for the chiffon cake batter, sift together the flour, cocoa powder, salt, and baking powder in a mixing bowl, then give them a good mix, and add the egg yolks, evaporated milk, instant coffee granules, and vanilla extract. Mix everything until combined and set the mixture aside.

Step 3
In another bowl, add the egg whites and beat them until frothy, then add the vinegar, and keep beating until foamy. Gradually add the sugar while beating continuously until medium peaks form, then add 2 dollops of it to the batter, and fold them until incorporated.
Step 4
Add the remaining egg mixture to the batter until uniform and combined, then transfer the batter to an 8×8-inch cake pan, and place it in a preheated oven. Allow it to bake at 320°F for about 25 to 30 minutes or until a toothpick inserted at the center comes out clean, then let it cool down completely, and frost it with the chilled frosting as shown in the video. Serve and enjoy!
