This delicious cake by RecipeTin Eats on YouTube is a recipe that you’ll definitely make over and over again because it was super rich, chocolatey, and very simple to make. You can serve this on special occasions, parties, gatherings, or even on a normal day, any time you want it, you can have it. Personally, I love pairing this with a hot drink or a fruity and cold drink, it just tastes amazing with anything.

Ingredients:

  • 4 ounces of dark chocolate chips
  • 7 tbsp of butter, salted
  • 1¼ cups of white sugar
  • ¼ cup of vegetable or canola oil
  • 1 tsp of vanilla extract
  • 2 eggs, at room temperature
  • ¼ cup of cocoa powder
  • 1 cup of flour
  • 1 tsp of baking powder
  • 1 cup of boiling hot water
  • 1 tbsp of coffee granules, optional

Ganache

  • 1 cup of heavy or thickened cream, 30%+ fat
  • 8 ounces of dark chocolate chips

Directions:

Step 1

Preheat your oven to 150°C or 30o°F, then line a 9-inch springform cake pan with parchment paper, and grease it with nonstick cooking spray. In a microwave-safe bowl, add the butter and chocolate, then heat them in the microwave at a high setting with 30 seconds intervals, and stir in between until melted and well combined. Add the oil, vanilla, and sugar, then give them a good stir, add the eggs, and continue to mix until well combined. Sift over the cocoa, baking powder, and flour, then whisk them together until smooth, pour the hot water, and mix until incorporated and uniform.

Step 2

Pour the batter into the prepared pan spreading it evenly, then allow it to bake for about 1 hour or until a toothpick inserted at the center comes out moist but clean, and then transfer it to a cooling rack to cool down completely. Unmold the cake then prepare the ganache. In a heatproof bowl, add the chocolate and cream, then heat them up at 3o seconds intervals until melted, and stir until smooth. Place it in the refrigerator for about 1 to 2 hours or until thickened, then spread it all over the cake, and swirl. Serve and enjoy!
