Ingredients:

  • 2 cups sugar
  • 4 oz unsweetened chocolate
  • 1/4 pound unsalted butter (1 stick) and additional for greasing the pan
  • 2 cups of all-purpose flour and additional for dusting the pan
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon sea salt
  • 1 cup of milk
  • 1 teaspoon cider vinegar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups semisweet chocolate chips
  • 1 1/2 cup sour cream at room temperature

Instructions:

Step 1:

Preheat the oven to375 degrees F. To avoid drips from the cake while baking, place a baking sheet on the lowest rack. Put sugar, unsweetened chocolate, butter, and 1 cup of water in a saucepan. Turn the heat to medium and stir occasionally until all ingredients are melted and blended. Remove from heat and let it cool for a few minutes.

Step 2:

Sift together the flour, baking soda, and salt. Get a small bowl and stir together the vinegar and milk. Then grease and flour a 9-inch tube pan.

Step 3:

After the chocolate in the pan has cooled a bit, add the milk mixture and eggs, then whisk. Next, add the dry ingredients (be sure to not overmix). When the mixture is smooth, add the vanilla and whisk once or twice. Pour the batter into the tube pan and bake on the middle rack for 30-35 minutes. After baking, remove it from the pan and let it cool on a rack.

Step 4:

Melt the chocolate chips in a double boiler and let cool to room temperature. The chocolate and sour cream must have the same temperature; otherwise, the icing will be lumpy or grainy. Stir in the sour cream, 1/4 cup at a time, until it has a smooth texture. (If you don’t like sour cream, you can use greek yogurt instead)

Step 5:

Slice the cake into two layers. Lay the top layer, top-side-down to a cake plate. Spread the icing, then top with the bottom layer, setting the bottom side up. This will give a straighter edge. Now, ice the top, sides, and center.
