I’ve never been much of a fan of white chocolate chips or dried fruits because I prefer dark and bittersweet chocolates more, but that changed when I tasted this white chocolate chip cranberry cookie by Sally’s Baking Recipes on YouTube. The flavor is perfectly balanced and the white chocolate chip and cranberry is a great combination, plus, it adds a fun and interesting texture to the cookie which makes it super enjoyable to munch on.

Ever since trying this recipe, I have found a new liking to white chocolate and dried fruits, and am also looking forward to other recipes that incorporate this, too. It is a treat worth trying and this is definitely a new favorite recipe of mine, I might even include other dried fruits or even nuts in this recipe in the future. Ingredients for White Chocolate Chip Cranberry Cookies:

  • ¾ cup of unsalted butter, softened
  • ¾ cup of packed light or dark brown sugar
  • ¼ cup of granulated sugar
  • 1 large egg, at room temperature
  • 2 tsp of pure vanilla extract
  • 2 cups of all-purpose flour
  • 2 tsp of cornstarch
  • 1 tsp of baking soda
  • ½ tsp of salt
  • ¾ cup of white chocolate chips, plus more for garnish
  • 1 cup of dried cranberries, plus more for garnish

How to Make White Chocolate Chip Cranberries:

Step 1

In a large mixing bowl, add the butter, brown sugar, and granulated sugar, then beat them together over medium speed for about 2 minutes until creamy and combined, add the egg and vanilla, and continue to beat until incorporated. Make sure to scrape down the sides and bottom of the bowl, then beat them again to combine, and set it aside.

Step 2

In another bowl, add the flour, cornstarch, baking soda, and salt, then give them a good whisk, and pour it into the wet mixture gradually while beating continuously over low speed until fully combined, the cookie dough should be soft and thick. Add the white chocolate chips and dried cranberries, then beat them over low speed until combined, cover the bowl tightly, and place it in the refrigerator to chill for at least 1 hour or up to 3-4 days.

Step 3

Once ready, remove the cookie dough from the refrigerator, then if you chilled it longer than 3 or 4 hours, let it sit at room temperature for about 30 minutes, and preheat your oven to 177°C or 350°F. Scoop the dough about 1.5 tablespoons each, then roll them into balls, and place them on a baking sheet lined with parchment paper or Silpat.

Step 4

Make sure to space them evenly about 3 inches apart from each other, then put them in the preheated oven, and allow them to bake for about 11 to 12 minutes or until lightly browned on the edges. Let them cool on the baking sheet for around 5 minutes, then press down more chocolate chips and dried cranberries on top, and transfer them to a wire rack to cool completely. Serve and enjoy!
