These mini cakes are also filled with a yummy cream filling, and every bite is just so flavorful that you won’t have enough of it. Try making this for your next party and expect compliments from your guests! You can also give these as an edible gift for special occasions or holidays.

Step 1
Sift together the cocoa powder, baking powder, baking soda, and salt in a large bowl, then mix them well, and set them aside. In a separate bowl or measuring cup, whisk together the milk and vinegar or lemon juice until combined, then set it aside, and let it sit for around 5 minutes.
Step 2
In the bowl of a stand mixer, beat the butter and sugar over medium speed for about 5 minutes until creamy, add the egg and vanilla extract, and keep beating until incorporated.
Step 3
Add the flour mixture in 3 batches alternating it with milk, then beat them over low speed in between each addition to combine, and make sure to avoid overmixing, the batter should be thick and stiff.
Step 4
Transfer the mixture to a piping bag, then pipe it onto a baking sheet lined with parchment paper, and shape them nicely as shown in the video. Place them in an oven preheated at 350°F, then allow them to bake for about 12 to 15 minutes, and let them cool completely.
Step 5
Gently remove them from the parchment paper, then pair them together, and prepare the filling. Add the white chocolate and cream to a heat-proof bowl, then microwave them at 30-second intervals, and stir consistently until smooth. Add the butter, then give them a good mix until melted, and place it in the fridge.
Step 6
Stir the filling every 10 to 15 minutes until thick, then spread some of the fillings in between each sandwich cake pair, place them in the refrigerator, and allow them to chill for about 1 hour until firm.
Step 7
In another heat-proof bowl, add the semi-sweet or milk chocolate, then heat them until melted, and use a fork to dip the cake in it individually until nicely covered. Melt the white chocolate, then use it to decorate each mini cake, and serve. Enjoy!
