Step 1
Preheat your oven to 320°F, then place the biscuits in a food processor, and pulse them until fine crumbs. Add the melted butter, then pulse them again until combined, and transfer them to the bottom of a 9-inch springform pan. Press the crumbs firmly, then put them in the preheated oven, and allow them to bake for about 10 minutes. Once done baking, remove it from the oven, then set it aside to cool down, and prepare the filling.

In a heat-proof bowl, add the chopped chocolate, then put it over a pot with simmering water, and allow it to melt completely before setting it aside. In a separate large bowl, add the cream cheese, sugar, salt, and vanilla extract, then beat them until smooth, add the sour cream, and continue to beat until incorporated. Add the cocoa powder, then beat the mixture again to combine, and scrape the sides if needed.
Step 3
Add the eggs one at a time beating well after each addition, then add the melted chocolate, and give them a good mix until evenly combined. Wrap the bottom of the pan with aluminum foil crimping the sides nicely, then pour the filling over the crust, and spread it evenly smoothing the surface nicely. Place it in a baking pan, then pour in boiling water until it’s halfway up the side of the pan, and place it in the preheated oven.

Let it bake for about 55 to 60 minutes or until the center is almost set, then turn off the oven, and leave it with the door slightly open allowing it to cool inside for about 1 hour. After an hour, remove it from the oven, then unmold it carefully by running a thin knife around the edges of the pan, and place it on the counter to cool to room temperature. Transfer the cheesecake to the refrigerator, then allow it to chill overnight, and when ready to serve prepare the ganache.

Place a saucepan on a stove over medium-high heat, then pour in the heavy cream, and bring it to a simmer. Pour the hot cream into the bowl of chopped chocolate, then let them sit for about 1 to 2 minutes, and then give them a good stir until smooth and combined. Allow it to cool slightly, then pour it over the chilled cheesecake, and spread it evenly. Let it set, then serve, and enjoy!
