Step 1
Preheat your oven to 410°F, then grease a 9-inch springform pan with nonstick cooking spray or butter, and line it with parchment paper making sure to leave a 2-inch overhang on the sides. Put the chocolate in a heat-proof bowl, then heat it in the microwave with 30-second intervals, and stir in between each interval until the chocolate is completely melted. Set it aside and let it cool slightly.
Step 2
In a large mixing bowl, add the cream cheese and sugar, then beat them for about 2 to 3 minutes or until smooth and creamy, add the cooled melted chocolate, and keep mixing until smooth and combined. Add the eggs one at a time, then mix well in between each addition, add the heavy cream and vanilla bean paste, and continue to mix until incorporated. Sift over the flour and add the salt, then mix them over low speed just until combined, and make sure to not overmix.
Step 3
Pour the batter into the prepared pan, then place it in the preheated oven, and let it bake for about 40 to 55 minutes or until the top is deeply golden and the center is slightly jiggly. Once done baking, let the cheesecake cool at room temperature for about 2 hours, then transfer it to the refrigerator, and let it chill for at least 4 hours up to overnight. When ready to serve, carefully remove the cheesecake from the pan, then slice, and serve. Enjoy!
