Their chicken is popular because of its deep flavor and crispy skin, you can pair it with anything, from rice to noodles, and even veggies. The first thing you have to do is to wash and prepare the chicken leg quarters, then put them in a pot filled with about 6 cups of water, and add the salt and sugar. Cover the pot, then put it in the fridge, and let it sit for about 4 to 6 hours up to overnight to let the chicken soak in the brine. Place a pot on a stove over medium-high heat, then add the water, soy sauce, Chinese rice wine, star anise, white pepper, five-spice, sugar, ginger, garlic, and green onions, and give it a good stir.

Bring it to a boil for about 10 minutes, then give a good mix before adding the chicken leg quarters, and parboil it in the broth for about 15 to 20 minutes making sure to baste every 5 minutes. After 15 to 20 minutes, turn off the heat, remove the chicken from the north, then place it on a rack to drain off the excess oil and dry a little. Place a pot, saucepan, or deep pan on a stove over medium to medium-high heat, then add oil just enough to submerge the chicken, and let it heat up. Once the oil is hot, start deep frying the leg quarters one at a time or in batches, then let them cook for about 1o to 15 minutes or at least until they turn golden brown.
