Step 1
Remove the stems and seeds of the peppers, then lightly toast them in a dry pan for about 1-2 minutes per side, and soak them in very hot water for about 20 minutes until they are nice and soft. Add the softened peppers to a food processor with ½cup of the soaking water, then add a little salt to taste, and process until smooth. Strain the mixture if desired and set it aside for later.
Step 2
Place a large pot or Dutch oven on a stove over medium heat, then add the oil, and let it heat. Season the beef with salt and pepper and add them to the hot pan in batches, then sear them for a few minutes per side, and set them aside on a plate. Pour in ¼ cup of beef stock, then scrape the burnt bits at the bottom, and add in the jalapenos and onion. Let them cook for about 6 to 7 minutes until softened, then add the garlic, and stir to combine.
Step 3
Allow it to cook for 1 more minute, then pour in the prepared chill sauce followed by the seasonings, and stir them until thoroughly combined. Let the chili cook for about 5 minutes, then pour in the remaining beef broth, and add in the cooked beef. Bring it to a boil, then cover the pot with the lid, and let it simmer for about 2 hours or until the beef is very tender. Serve with your favorite fixins and enjoy!
