It has sauteed fresh produce with perfectly seasoned stir-fried chicken fillet topped with mozzarella cheese. Who will say no to this amazing recipe? I bet no one will. Lay the chicken fillet and season both sides with salt and pepper. Sprinkle some flour on each side then coat evenly using your hands.
Add some butter and olive oil to your pan. Once the butter is melted, put the chicken fillet. Fry both sides until golden brown. Once cooked, take the chicken out of the pan and set it aside.
Dice the onion and garlic. Next, cut the bell peppers and potatoes into small pieces. For the tomatoes, slice them into 4 pieces.
Preheat the oven to 400 degrees F.
Place a clean pan on the heat and add butter and olive oil. Once melted, fry the potatoes. Once the potatoes are a bit crispy, add the onions, bell pepper, and tomatoes. Mix all of the vegetables. Now, put the garlic and tomato sauce. Reduce the heat and add salt, water, and provencal herbs. Mix all the ingredients.
Lay the cooked chicken fillet on top of the vegetables on the pan and sprinkle some mozzarella cheese.
Place in the oven and bake for 10 minutes or until the cheese is melted. Once done, remove from the oven and garnish with chopped parsley.
