  • 1½ pounds ground chicken
  • 1½ cups carrots, diced
  • 1½ cups peas, fresh or frozen
  • 1½ cups chicken or beef stock
  • 2 tbsp flour
  • 3 tbsp tomato paste
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp oregano
  • 1 tsp paprika
  • 1 tsp red chili flakes
  • 1 tsp cumin

Sweet Potato Layer

  • 2 large or 2.2 pounds sweet potatoes, peeled, cut into chunks
  • Salt, to taste
  • Pepper, to taste

Directions:

Step 1

Place a pot on a stove over medium-high heat, then fill it with water, add a teaspoon of salt, and bring it to a boil. Once boiling, add the chopped sweet potato and then continue to let it boil for about 20 to 25 minutes or until fork tender. While waiting for the sweet potatoes to soften, place a large pan on a stove over medium heat, then add the olive oil, and let it heat up before adding the chopped onions. Saute them for 4 to 5 minutes, then add the crushed garlic and grated ginger, and continue to cook them for 1 minute.

Step 3

Check the sweet potatoes and once they are done cooking, mash them until smooth, then season them with salt and pepper, and set them aside. Transfer the chicken mixture to a baking dish, then spread it nice and evenly, and then spread the puree on top until covered. Put it inside the preheated oven, then let it bake at 200°C or 400°F for about 30 minutes, and let it cool down for 10 minutes. Serve and enjoy!
