Sweet Potato Layer
Step 1
Place a pot on a stove over medium-high heat, then fill it with water, add a teaspoon of salt, and bring it to a boil. Once boiling, add the chopped sweet potato and then continue to let it boil for about 20 to 25 minutes or until fork tender. While waiting for the sweet potatoes to soften, place a large pan on a stove over medium heat, then add the olive oil, and let it heat up before adding the chopped onions. Saute them for 4 to 5 minutes, then add the crushed garlic and grated ginger, and continue to cook them for 1 minute.

Step 2
Now, you can add the diced carrots, then give them a good stir, and let them cook for about 5 minutes or until tender. Add the ground chicken, then stir and cook it until nice and brown, and then season them with salt, pepper, paprika, red chili flakes, oregano, and cumin. Stir them all together, then add the tomato paste, and continue to stir until well combined. Stir in the flour, then add the peas and stock, and continue to stir them to combine.
Step 3
Let the mixture simmer, then reduce the heat to low, and let it cook stirring it occasionally until the sauce has thickened. Check the sweet potatoes and once they are done cooking, mash them until smooth, then season them with salt and pepper, and set them aside. Transfer the chicken mixture to a baking dish, then spread it nice and evenly, and then spread the puree on top until covered. Put it inside the preheated oven, then let it bake at 200°C or 400°F for about 30 minutes, and let it cool down for 10 minutes. Serve and enjoy!
