Ingredients:

  • 12 oz spaghetti
  • 1 & 1/2 lb chicken tenders
  • 1 & 1/2 tsp fine sea salt
  • 1/2 tsp black pepper
  • 1/2 cup all-purpose flour
  • 2 tbsp olive oil (divided)
  • 6 tbsp unsalted butter (divided)
  • 3/4 cup dry white wine chardonnay (or sauvignon blanc)
  • 4 garlic cloves (1 tbsp minced)
  • 1 tsp lemon zest (from 1 lemon)
  • 1/4 cup lemon juice (from 2 lemons)
  • 1/3 cup parsley (finely chopped)
  • parmesan (freshly shredded to serve)

Directions:

Step 1

Season 1 & 1/2 lb of chicken tenders with 1 & 1/2 tsp of salt and 1/2 tsp of black pepper. (Season both sides.) Next, dip the chicken tenders into flour, dusting off the excess. Set them aside. Next, chopped 1/3 cup of fresh parsley, minced 4 garlic of cloves, zest 1 lemon, and get 1/4 cup of lemon juice. After this, cook 12 oz of spaghetti pasta in a salted pot of water. In a large skillet over medium-high heat, add 1 tbsp of olive oil and 1 tbsp of unsalted butter. Once the butter is melted, lay down the chicken tenders and saute each side for about 2 minutes. Once the chicken tenders are done, set them aside. In the same skillet, add 3/4 cup of dry white wine and scrape the bottom to deglaze. Cook it down for about 5 minutes.

Step 2

After 5 minutes, add 4 tbsp of unsalted butter and whisk to melt. Next, add the minced garlic and continue whisking for another 30 minutes. Turn off the stove and add 1/4 cup of lemon juice, 1 tsp of lemon zest, and the freshly chopped parsley. Whisk the sauce well, then season to taste. After this, add the chicken tenders back to the pan and any accumulated juices on the plate. Coat the chicken tenders with the sauce nicely. Finally, transfer the pasta to a big plate and pour over the sauce, placing the chicken tenders on top. Garnish with chopped fresh parsley to pop some color.
