Step 1
Preheat your oven to 400 degrees, then line two large baking sheets with parchment paper, and set them aside. Lightly dust your work surface with flour, then lay the sheet of your puff pastry, and roll it out until it turns into an 8″ x 12″ rectangle. Cut the puff pastry into 2-inch squares, then slice the sausage links into ½-inch pieces, and place each sausage piece on top of each pastry square. Make sure to press the sausage down, then transfer them to the prepared sheet pans, and arrange them in a single layer.

Step 2
Brush the edges of each pastry square with beaten eggs, then put them in the preheated oven, and let them bake for about 18 to 20 minutes or until golden brown and puffy. While waiting for the chicken sausage puffs to bake, prepare the creamy dipping sauce. In a small mixing or serving bowl, add the mustard and sour cream, then whisk them together until well combined and uniform, and serve together with the warm chicken sausage puffs.
