Ingredients:

  • 4 medium/large chicken breasts (about 2 lb)
  • garlic salt (to taste)
  • black pepper (to taste)
  • 1/2 cup pesto sauce
  • 8 oz shredded mozzarella cheese (reserve 2 oz for topping)
  • 1 large or 2 medium tomatoes (thinly sliced into 12 rings)
  • 1 cup cherry tomatoes (optional)
  • fresh basil leaves (shredded, optional garnish)

Directions:

Step 1

Cut each chicken breast in half, lengthwise, so you end up with 8 thin cutlets. Pound each cutlet to an even eighth of an inch thickness. Arrange all of your cutlets on a large cutting board or a baking sheet. Season both sides with garlic salt and black pepper. Add 1 tbsp of pesto sauce over each cutlet and spread it evenly in the center. Next, slice 1 large tomato into 12 rings, then place 2 slices on each cutlet. Sprinkle the tops with 2 to 3 tbsp of shredded mozzarella cheese. After this, tightly roll up each cutlet and secure the end with a toothpick. Preheat your oven to 425 degrees F at this point.

Step 2

Next, add 1 tbsp of olive oil and butter to a large oven-safe skillet over medium-high heat. Once the butter is done sizzling, add the chicken roll-ups with the toothpick side up. Sear them for four minutes on each side. Now, turn off the stove and sprinkle the tops with your remaining mozzarella cheese and 1 cup of cherry tomatoes (optional). Transfer the skillet to the oven and bake at 425 degrees F for 13 to 15 minutes.
