It uses cauliflower as a substitute for rice and it tastes incredibly good and flavorful. This dish is very easy to prepare and is ready in as fast as 30 minutes, perfect for last-minute dinner preparation, too!

Ingredients:

  • 1 head of cauliflower
  • onion, chopped
  • 3 cloves of garlic, crushed
  • 400 grams or approx. 1 pound of chicken breast, cut into small chunks
  • Salt
  • Black pepper
  • ½ tsp of red chili flakes, optional
  • 250 grams or ½ pound of green beans
  • 3 tbsp of olive oil
  • 1 tbsp of sesame oil
  • 2 tbsp of soy sauce
  • 2 springs of green onion

Directions:

Step 1

Cut the cauliflower into small florets or chunks, then place them in a food processor in batches, and process them until crumbs making sure not to overprocess. Process the rest of the cauliflower florets and set them aside. Place a large pan on a stove over medium-high heat, then heat up the olive oil, and add the chopped onion and crushed garlic. Give them a good toss and saute them for about 5 to 6 minutes, then add the chicken breast chunks, and season them with salt, pepper, and chili flakes.

Step 2

Toss them all together and cook them for about 4 to 5 minutes or until the chicken is cooked through, then add the green beans, and continue to cook them for 2 to 3 more minutes. Now, add the cauliflower rice, then add in the soy sauce and sesame oil as well, and allow them to cook for about 3 to 5 minutes while stirring occasionally. Make sure not to overcook the cauliflower, then once softened, turn off the heat, and add the chopped green onion. Serve warm and enjoy!
